Will Makris has
been fortunate enough to pick compatible matches that have resulted in successful must-visit restaurants.

The Long Island native has been a part of the restaurant and nightlife sectors in some shape or form for over a decade. Makris proved himself early by
exceeding the expectations of established hospitality moguls Michael Satsky and Brian Gefter. His responsibilities expanded, and job prospects rolled in by the handful.

“I was extremely grateful for Satsky and Gefter for giving me the opportunity to help transform their cafe into the hottest spot in New York at the time,”
Makris said. “This opened the door for my future partnerships like with Scott Sartiano, Cobi Levy, and Maggio Cipriani.”

Makris is a man of the people. His ability to build enduring relationships is one reason why industry leaders gravitate towards his assistance. Makris
keeps the reservation and waitlist overflowing because he accommodates everyone’s needs and plays a fair hand with all his employees and customers.

“As far as I’m concerned, everyone is equal, we all play a role that attributes to the success of the business,” Makris said. “This is the hospitality
world, and that means we must be nice to everyone. Now, I understand there are times when assertiveness is necessary, especially when someone is taking advantage of the business or not doing their job properly.”

Each partner has certain responsibilities and specialties, and Makris plays the role of the people pleaser and accommodator. His other partners are similar,
yet more accountable for managerial operations. Their divergent thinking and friendly contact make these collaborations so fruitful.

“Will and I start at a point of honesty both between us and to the situation in the market,” Lola Taverna Co-owner
Cobi Levy said.
“I’m controlling much of the touchpoints, and Will is valuable to offer real assessments and relay guest feedback. Though, his true skill is his charm and ability to be very well-liked in a business that is not so well known for ‘real’ people. His relationships
built over the years span such a wide swath, he’s simply the best.”

Makris is a hot commodity and offers are still presented to him daily. However, he is content with his current partnerships and projects and maybe in
a few years will reevaluate adding more to his plate.
